Ingredients
- 3 tablespoons Flour
- 3/4 cup Sugar
- 3/4 teaspoon Salt
- 3 Egg Yolks, slightly beaten
- 3/4 cup Evaporated Milk
- 3/4 cup Water
- 1 tablespoon Lemon Zest
- 3 tablespoons Lemon Juice
- 3 Egg Whites, stiffly beaten
Method
- Preheat oven to 350 degrees.
- Mix together the flour, sugar and salt.
- Add egg yolks.
- Stir in the evaporated milk and water.
- Slowly stir in lemon zest and juice.
- Fold in egg whites.
- Pour into a well-greased 8×8 baking dish. Place in the oven in a pan of hot water (I use a 9×13), with the water reaching about 1/2 up the 8×8 dish. Bake for 45 minutes to 1 hour, or until brown. Be gentle with it while it cools on a rack.
